It is not by accident that the appearance of this castle has such an effect on us. Born from the conjunction of Italian and French influences, the castle is unique. Located on the south-eastern plain of Pouilly-en-Auxois, Château Sainte Sabine is one of the few 16th century castles to have survived the decades.

The spirit of the place has been carefully preserved and the 23 Rooms and Suites bear witness to this. Antique furniture decorates all the rooms in harmony with exposed beams, oak parquet flooring, ancient tiles or Burgundy stones. As the jewel of the Château, the Salle des Gardes Suite features a magnificent 5-meter-high French ceiling and a neo-Gothic fireplace, inside 110m² of timeless elegance and unique atmosphere.

At the gastronomic restaurant Lassey, the Chef and his team offer authentic, gourmet cuisine, that revisits Burgundy specialties using seasonal ingredients. Working with fresh, local produce, he infuses a touch of wild herbs and vibrant flavors into every dish, creating a menu that's both creative and comforting.
